Etymology of Crystal Dumplings
Crystal dumplings, commonly known as ‘Har Gow’, are one kind of traditional Cantonese dumpling that gets its name from its translucent wrappers. Originally created in Guangzhou, a port city in China in the 20th century, crystal dumpling’s aesthetic style and flavor spread across the country through Chinese traders.
Crystal dumplings were especially made during the Lunar New Year because it symbolizes wealth and prosperity in Chinese culture. This cantonese dumpling exterior takes on a translucent look when steamed, thus giving the name crystal dumplings.
As you can see the inner fillings clearly through the translucent wrapper after it’s been steamed, it makes it more appealing aesthetically, which led to the rapid popularity of Crystal dumplings.
Traditional Preparation of ‘Har Gow’ at TAOD
The Art of Dumplings’ culinary chefs craft the crystal dumplings, or ‘har gow’ in house. The external wrapper is made from tapioca starch to get the translucent skin when steamed. The wrappers are filled with a variety of fillings. Traditionally, fillings in crystal dumplings consist of prawns, carrots, spinach, seasoned pork, and shiitake mushrooms.

- Traditional Har Gow: Prawn-fillings: You can either try ‘har gow’ filled with succulent prawns seasoned and chopped finely along with bamboo sprouts. With the bamboo sprouts, you get a texture and crunch along with the natural sweetness of the prawns as you bite into it.
- Contemporary Crystal Dumplings: For all the vegetarian dumpling lovers out there, you can try water chestnut and asparagus-filled crystal dumplings too.
- Sides: With a drizzle of sesame oil on the dumpling, it helps enhance the flavor of the dumplings.
